Ingredients:
- 1/2 cup (120g) sourdough discard
- 1 cup (225g) granulated sugar
- 1/2 cup (115g) unsalted butter, softened
- 2 large eggs
- 1 cup (245g) pumpkin purée
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1/2 tsp (3g) salt
- 1 tbsp (8g) ground cinnamon
- 1 tsp (2g) ground ginger
- 1/2 tsp (1g) ground nutmeg
- 1/4 tsp (1g) ground cloves
- 1/2 cup (65g) all-purpose flour
- 1/2 cup (100g) brown sugar, packed
- 1 tsp (2g) ground cinnamon
- 4 tbsp (55g) unsalted butter, cold and cubed
Instructions:
- Preheat your oven to 350°F (175°C). Grease your loaf pan and line it with parchment paper for an easy lift.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the sourdough discard and pumpkin purée until the mixture is completely smooth and orange-hued.
- In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, ginger, nutmeg, and cloves.
- Gently fold the dry ingredients into the wet mixture using a spatula. Stir only until no streaks of flour remain.
- In a small bowl, rub the cold cubed butter into the streusel ingredients (flour, brown sugar, cinnamon) using your fingertips until the mixture resembles coarse sand.
- Pour the batter into the prepared pan and sprinkle the cinnamon streusel evenly across the top, pressing lightly.
- Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
