Ingredients:
- 1/2 cup (120g) sourdough discard (unfed)
- 1/2 cup (120g) pumpkin purée
- 2 medium (200g) overripe bananas, mashed
- 1/2 cup (115g) unsalted butter, melted and cooled
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (190g) all-purpose flour
- 3/4 cup (150g) brown sugar, packed
- 1 tsp (5g) baking soda
- 1/2 tsp (2g) baking powder
- 1/2 tsp (3g) salt
- 1 1/2 tsp (4g) ground cinnamon
- 1/2 tsp (1g) ground ginger
- 1/4 tsp (0.5g) ground cloves or nutmeg
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 loaf pan with butter or cooking spray, then line it with parchment paper, leaving an overhang on the sides for easy removal.
- In a large bowl, mash the bananas until smooth.
- Whisk in the melted butter, pumpkin purée, sourdough discard, eggs, and vanilla extract. Stir until the batter is a consistent, mahogany-colored mixture.
- In a separate medium bowl, whisk together the flour, brown sugar, baking soda, baking powder, salt, and spices.
- Gently fold the dry ingredients into the wet mixture using a spatula. Stop mixing as soon as no streaks of flour remain to avoid overmixing.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 55–65 minutes. The edges should be pulling away slightly from the pan, and a toothpick inserted into the center should come out clean or with just a few moist crumbs.
- Let the bread cool in the pan for 10 minutes before lifting it out via the parchment paper to cool completely on a wire rack.
