Ingredients:

  • 4 oz low-fat cream cheese, softened
  • 1 tbsp honey
  • 1/2 tsp vanilla extract
  • 1/4 tsp lemon zest, finely grated
  • 8 slices sprouted grain bread
  • 1 cup fresh strawberries, hulled and thinly sliced
  • 1 tsp lemon juice

Instructions:

  1. In a small mixing bowl, combine the softened cream cheese, honey, vanilla extract, and lemon zest. Whip the mixture with a spatula until smooth and airy.
  2. Toss the thinly sliced strawberries with one teaspoon of lemon juice. Gently pat the slices with a paper towel to remove excess surface moisture.
  3. Spread a generous, even layer of the cream cheese mixture onto one side of all eight bread slices, ensuring the spread reaches the edges.
  4. On four of the slices, arrange the strawberry slices in an overlapping pattern. Top each with a remaining cream-cheese-coated bread slice.
