Ingredients:
- 4 oz low-fat cream cheese, softened
- 1 tbsp honey
- 1/2 tsp vanilla extract
- 1/4 tsp lemon zest, finely grated
- 8 slices sprouted grain bread
- 1 cup fresh strawberries, hulled and thinly sliced
- 1 tsp lemon juice
Instructions:
- In a small mixing bowl, combine the softened cream cheese, honey, vanilla extract, and lemon zest. Whip the mixture with a spatula until smooth and airy.
- Toss the thinly sliced strawberries with one teaspoon of lemon juice. Gently pat the slices with a paper towel to remove excess surface moisture.
- Spread a generous, even layer of the cream cheese mixture onto one side of all eight bread slices, ensuring the spread reaches the edges.
- On four of the slices, arrange the strawberry slices in an overlapping pattern. Top each with a remaining cream-cheese-coated bread slice.
