Ingredients:

  • 2 cups (480ml) heavy whipping cream, cold
  • 1/2 cup (100g) powdered sugar, sifted
  • 1 tsp (5ml) vanilla extract
  • 1/2 tsp (2.5ml) orange extract
  • 1 pinch (0.5g) fine sea salt
  • 2 cups (300g) fresh strawberries, hulled and quartered
  • 1 cup (150g) fresh blueberries
  • 1 cup (150g) fresh raspberries
  • 1 tbsp (15ml) granulated sugar
  • 1 tsp (5ml) fresh lemon juice

Instructions:

  1. In a medium bowl, gently toss the strawberries, blueberries, and raspberries with the granulated sugar and lemon juice. Set aside at room temperature for 15–30 minutes to macerate.
  2. Pour the cold heavy cream into a chilled mixing bowl. Start the mixer on low speed, then gradually increase to medium-high. Slowly add the sifted powdered sugar and salt as the cream thickens.
  3. Once soft peaks form, add the vanilla extract and orange extract. Continue whipping for another 30–60 seconds until stiff peaks form.
  4. Dollop a generous layer of whipped cream into the bottom of each glass. Spoon a layer of the macerated berries and their syrup over the cream. Repeat the layers, finishing with a crown of berries on top.
  5. Place the glasses in the refrigerator for at least 2 hours to firm up and allow the flavors to infuse.
