Ingredients:
- 2 cups (480ml) heavy whipping cream, cold
- 1/2 cup (100g) powdered sugar, sifted
- 1 tsp (5ml) vanilla extract
- 1/2 tsp (2.5ml) orange extract
- 1 pinch (0.5g) fine sea salt
- 2 cups (300g) fresh strawberries, hulled and quartered
- 1 cup (150g) fresh blueberries
- 1 cup (150g) fresh raspberries
- 1 tbsp (15ml) granulated sugar
- 1 tsp (5ml) fresh lemon juice
Instructions:
- In a medium bowl, gently toss the strawberries, blueberries, and raspberries with the granulated sugar and lemon juice. Set aside at room temperature for 15–30 minutes to macerate.
- Pour the cold heavy cream into a chilled mixing bowl. Start the mixer on low speed, then gradually increase to medium-high. Slowly add the sifted powdered sugar and salt as the cream thickens.
- Once soft peaks form, add the vanilla extract and orange extract. Continue whipping for another 30–60 seconds until stiff peaks form.
- Dollop a generous layer of whipped cream into the bottom of each glass. Spoon a layer of the macerated berries and their syrup over the cream. Repeat the layers, finishing with a crown of berries on top.
- Place the glasses in the refrigerator for at least 2 hours to firm up and allow the flavors to infuse.
