Ingredients:

  • 1.5 cups (135g) rolled oats
  • 2 large (100g) eggs
  • 1 cup (240ml) whole milk
  • 2 tbsp (30ml) melted unsalted butter
  • 1 tbsp (12g) granulated sugar
  • 0.5 tsp (3g) baking powder
  • 0.25 tsp (1g) salt
  • 1 tsp (5ml) vanilla extract
  • 2 tbsp (30g) unsalted butter

Instructions:

  1. Place the rolled oats into the blender and pulse until they reach a fine, flour-like consistency. Add the eggs, milk, melted butter, sugar, baking powder, salt, and vanilla. Blend on high for 30–60 seconds until the batter is completely smooth and slightly frothy.
  2. Pour the batter into a bowl or leave it in the blender and let it sit for 10 minutes to allow the oats to hydrate.
  3. Heat your skillet over medium heat and melt a small knob of butter until it foams. Pour approximately 1/4 cup (60ml) of batter into the center and immediately tilt the pan in a circular motion to spread the batter into a thin, wide circle. Cook for 60–90 seconds until the edges look dry and lacy.
  4. Carefully slide the spatula under the edge and flip in one quick motion. Cook for another 30–60 seconds until the second side is lightly golden. Remove and repeat with the remaining batter.
