Ingredients:
- 1 lb ground turkey sausage (lean)
- 1 cup diced yellow onion
- 1 cup diced red bell pepper
- 1 tbsp olive oil
- 12 large eggs
- 1/4 cup milk
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 10 large whole wheat tortillas
- 2 cups shredded sharp cheddar cheese
- 1/2 cup chunky salsa, drained
Instructions:
- Heat olive oil in a 12-inch non-stick skillet over medium-high heat.
- Add ground turkey sausage to the skillet, breaking it apart with a spatula; cook until browned and the internal temperature reaches 160°F/71°C.
- Stir in diced yellow onion and red bell pepper; sauté until vegetables are tender-crisp.
- Transfer the sausage and vegetable mixture to a baking sheet and allow it to cool completely to room temperature.
- Lower skillet heat to medium.
- In a large mixing bowl, whisk eggs, milk, salt, and pepper until fully combined.
- Pour the egg mixture into the skillet, gently pushing the eggs from the edges to the center with a silicone spatula.
- Remove the pan from the heat while the eggs still look slightly underdone and creamy; transfer to the baking sheet to cool to room temperature.
- Lay out a whole wheat tortilla.
- Place a portion of cooled eggs in the center, topped with a scoop of turkey sausage mixture, a sprinkle of shredded cheddar cheese, and a teaspoon of drained salsa.
- Fold in the sides of the tortilla and roll tightly.
- Wrap each burrito individually in aluminum foil.
