Ingredients:
- 1/2 cup (45g) old-fashioned rolled oats
- 1 cup (240ml) unsweetened almond milk
- 1/2 cup (120ml) water
- 1 tsp coconut oil
- 1/2 tsp ground turmeric
- 1/4 tsp ground cinnamon
- 1/8 tsp ground ginger
- 1 pinch freshly cracked black pepper
- 1 tsp pure maple syrup
- 1 tbsp chopped walnuts
- 1 tsp chia seeds
- 1/4 cup fresh blueberries
Instructions:
- Place a small non-stick saucepan over medium-low heat. Melt the coconut oil, then stir in the turmeric, ginger, cinnamon, and black pepper. Bloom the spices for 30–60 seconds until fragrant.
- Add the rolled oats to the pan and stir to coat in the golden oil. Pour in the almond milk and water. Increase heat to medium until a gentle simmer is reached.
- Reduce heat to low and cook for 6 to 8 minutes, stirring occasionally. Once the liquid is mostly absorbed, remove from heat. Stir in the maple syrup and top with chopped walnuts, chia seeds, and fresh blueberries.
