Ingredients:

  • 1/2 cup (45g) old-fashioned rolled oats
  • 1 cup (240ml) unsweetened almond milk
  • 1/2 cup (120ml) water
  • 1 tsp coconut oil
  • 1/2 tsp ground turmeric
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground ginger
  • 1 pinch freshly cracked black pepper
  • 1 tsp pure maple syrup
  • 1 tbsp chopped walnuts
  • 1 tsp chia seeds
  • 1/4 cup fresh blueberries

Instructions:

  1. Place a small non-stick saucepan over medium-low heat. Melt the coconut oil, then stir in the turmeric, ginger, cinnamon, and black pepper. Bloom the spices for 30–60 seconds until fragrant.
  2. Add the rolled oats to the pan and stir to coat in the golden oil. Pour in the almond milk and water. Increase heat to medium until a gentle simmer is reached.
  3. Reduce heat to low and cook for 6 to 8 minutes, stirring occasionally. Once the liquid is mostly absorbed, remove from heat. Stir in the maple syrup and top with chopped walnuts, chia seeds, and fresh blueberries.
